The slim D-shaped handle tucks into the fingers confidently. The blade is both hard and light at the same time, making it glide through delicate fruits and hearty peels effortlessly. That's because the 64 layers of molten steel applied over the VG10 steel core hold a tight edge. Less work for more precise cuts. Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and, the linen Micarta handle with finishing details combine to make using and owning this knife a joy. Hone regularly. Hand wash.     A paring knife needs to be strong yet lightweight, rigid yet thin, and sharp sharp sharp. The concept of a paring knife made in the Japanese style is brilliant. The Miyabi Kaizen is delicate enough to maneuver comfortably in your hand yet sharp and thin enough to make the job a breeze. For a paring knife, I will now, always go with a Japanese knife.

    Miyabie Kaizen knives are super sharp. The core is made from VG10 super steel which is 60 on the hardness scale meaning it is capable of retaining the razor sharp edge use after use. No worries about chips or cracking because they go through a patented ice hardening process that brings out the full hardness of the steel while giving it maximum flexibility. With 64 additional layers of steel to create the damascus pattern this knife is extremely beautiful. This paring knife is a great size and the handle to blade ratio is perfect for a comfortable grip even though the blade is short and sharp for jobs such as peeling, mincing or dicing.

    If I am in my kitchen, there is never not a paring knife close at hand. One of the most used knives in the kitchen, well my kitchen for sure, this one is so sharp and easy to use due to the traditional D-shaped handle. The handle is made of linen micarta which although not water proof, is water resistant, so moisture will not be a problem. Which is great when peeling juicy fruits!

    It doesn't get any better than Miyabi! These thin blade Japanese knives are made with the Cryodur process that keeps blades sharp and durable and also chip and corrosion free. The Damascus blades have a 65 layer flower pattern that is exquisite! With the black linen Micarta handle, that looks and feels like wood, it offers a great grip and comfort while cutting.

    Incredibly beautiful damascus blade with a razor sharp edge. A little different blade shape than traditional German parers; the flat blade is perfect for chopping small herbs, garlic and ginger. The handle is a traditional D shape and is very comfortable but extremely durable as well. It's made from a linen and resin mixture that feels and looks like wood but has the durability of a synthetic material.
