Q: Is this game only multiplayer online or can you play co-op?
A: Local Co-Op has a second player with a Joy-Con or Poke Ball wander around in the overworld. In catching Pokemon the second player can help catch the Pokemon with up to double the catch rate. In battle they can take control of the Pokemon in the middle top slot for 2 v 1 battles (probably 2 v 2 in double battles).

Q: Hi guys, is there a substantial difference between this game and "Pokemon: Let's Go Pikachu" other than your starting pokemon? Are available items/locations/story-elements/etc different at all?

Regarding your question about the Pokemon: Let's Go Eevee! - Nintendo Switch: Besides the starting Pokemon, other differences include certain Pokemon being version exclusive - for instance, Oddish, Sandshrew, and Growlithe only appear in the wild for the Pikachu version whereas Vulpix, Bellsprout and Meowth only appear in Eevee.
