Directions How to Roll Sushi: Place sushi nori over the bamboo mat (sushi sudare) and spread about 1 cup of sushi rice evenly over 2/3 of the Nori. Place center ingredients (egg, kampyo, etc.) a little off center. Start to roll the mat lightly by putting the ingredients in the center guiding your fingers. Wrap the mat again and press lightly with both hands. Remove roll from the mat and slice them with lightly moistened knife each time.
