Q: What preservatives are used in your string cheese? I immediately get very sleepy, too sleepy to function, can’t drive, etc. Major brain fog. And I LOVE your cheese! I just have to plan ahead

A: Thank you for your question! Some cheese varieties, including our shredded varieties, contain Natamycin. Natamycin is a food grade mold inhibitor that is derived through fermentation. Natamycin has a long history of safe use as a mold inhibitor in cheese, meat, and other food products. It will not destroy any bacteria; it only prevents growth of yeast and mold. It is considered a preservative. Natamycin is not found in our string cheese.

I love the taste of these, but they’re about an inch shorter than they used to be — same price as before! Fine that they’re smaller, but put that information clearly on the front of the package! This is deceptive and I’m glad the government is cracking down on it!!

Others we’ve tried had a weird, fake taste to them and my kids didn’t like them, but we go through packages of these pretty regularly.
