Health food
The texture is a little weird. You have to get used to it. But it’s definitely healthy and good for you. And I’ve gotten used to the taste. I love to cook it with apple slices. Well chunks and I cut blueberries in half and throw it in there while it’s cooking halfway through. The process to cook it takes 20 minutes or more depending on how you like yours cooked.

Delicate grains if toasting, easy to burn.
The first time I tried to prepare the amaranth I tried toasting it in my toaster oven. Unfortunately I burned it. So far I haven't tried to cook it by simply boiling it.

Horrible Watery porridge
Followed directions exactly. Took over 50 minutes to cook and ended up a horrible porridge. Had to take lid off increase heat. Then I saw comments elsewhere that said use way less water.

I liked the Amaranth, but the cooking instructions left a lot to be desired. I followed the directions to a T, but my Amaranth was still crunchy. Good product, bad directions on how to cook it.

Excellent product!!
It’s been a while since I cooked this grain. This is my second time coming back to it. When I cooked this, I failed miserably. I had to watch a video on YouTube on how to cook it properly and now I am a master at it. I love this stuff! Looks and tastes like quinoa when cooked.I eat it for breakfast every other day. It is phenomenal!! It is a nutritional powerhouse with amazing health benefits!

Tiny, Fun Grains With Nice Taste and Texture
I started buying Bobs' amaranth when I wanted to try "Yamaranth" (our name for the yam & amaranth burrito recipe in the Bob's Red Mill cookbook). Its a fun grain because its so tiny. When cooked it keeps its shape and stays firm but chewable, and acts as a healthy thickener in this recipe and others, providing a fun texture.

For a Different Staple
Ideal low GI replacement for pasta, Quaker oats (or anything made by that tobacco company owned corporation) especially for people with Celiac disease, better flavor too. Boil it, add strained tomatoes and Mozzarella made without slaughterhouse enzymes for those who object to killing animals for food, leather, fur, etc.
