Arborio Rice - 16oz - Good & Gather™

This Arborio Rice from Good & Gather™ is perfect for any dish that requires fluffy or creamy rice. Most often used to make risotto, you can also use arborio rice to whip up a delicious paella or a sweet rice pudding. A great staple to keep on hand in your pantry, this kosher rice can be shared with the whole family.

Directions
Stovetop
1. Combine rice and water or broth in saucepan. Add butter and salt to taste, if desired.
2. Bring to a boil. Reduce heat; cover.
3. Simmer 20 minutes or until liquid is absorbed. Remove from heat and let stand 10 minutes. Fluff with fork and serve.

For 2 servings, use 3/4 cup water or broth and 1/2 cup rice.
For 4 servings, use 1 1/2 cups water or broth and 1 cup rice.
For 8 servings, use 3 cups water or broth and 2 cups rice.

Basic Risotto for Electric Pressure Cooker
Makes about 4 servings | Hands-On Time: 15 minutes | Total Time: 25 minutes

What You Need
2 Tbsp. butter
2 Tbsp. olive oil
½ cup minced onion
2 1/2 cups chicken stock
1 cup Good & Gather Arborio Rice
½ cup cream

What You Do
1. Combine butter and oil in 6-qt. electric pressure cooker. Select SAUTE. Once butter has melted, add onion. Cook, stirring occasionally, for 2 to 3 minutes or until onions are softened. Add rice and cook, stirring occasionally, for 2 to 3 minutes or until rice is toasted.
2. Add chicken stock; stir. Cover, lock lid and position steam valve to seal. Select PRESSURE COOK on HIGH for 4 minutes.
3. Carefully turn steam valve to vent to quick release pressure. Stir in cream. Select SAUTE; cook, stirring frequently, for about 3 to 5 minutes or until rice is cooked and risotto is creamy. Season to taste with salt and pepper. Serve immediately.

Ways to Enjoy
Stir in sautéed mushrooms, Parmesan cheese and garnish with chopped parsley.
Add cooked shrimp, grilled asparagus and a squeeze of fresh lemon.
Delicious with cooked and crumbled bacon, peas and a fried egg.
