Well, we start with the best trees, from the best orchards in California, growing the best variety of olive — the mighty manzanilla. Then we add nothing but water and sea salt. No additives, preservatives, or artificial colors. Unlike traditional olives, these new Pearls are not treated with ferrous gluconate, preserving the olives’ natural brown-black color. Oil levels vary by olive variety and crop year, and cold temperatures or movement during shipping can cause this to appear in the can. Our quality team works hard to ensure consistency, but it can occasionally happen. You can rinse the olives in warm water using a strainer to remove the residue. Thank you!
