  • A: FDA allows the use of unpasteurized raw milk for making cheeses that are aged longer than 60 days. At BelGioioso, we use raw milk for our Parmesan (aged 10 months), American Grana (aged 18 Months), Romano (aged 5 months), Asiago (aged 5 months) and Sharp Provolone (aged 7 months). The aging of the cheese has a very similar effect to pasteurization, which is why cheese aged more than 60 days can be made with unpasteurized milk. Aging preserves most of the flavor nuances of aged cheeses. Yes, it would be safe to consume.

    Use within 5 days of opening?

    So you buy this cheese and you have 5 days to use it or it starts getting mold. Fresh grated parm lasts longer than this cheese. You really don’t know till you remove the lid and it’s printed on the inner seal. Cheese is good, just goes bad really fast. Open it on Monday for spaghetti by Thursday it has moldy spots and went in the trash. It’s good cheese if you use it ALL in 1 sitting.
