I am so happy to have found Banza products. I have severe allergies to wheat and I also have sensitivities to nightshades and rice. So as you can imagine finding any gluten free pasta that does not contain rice and tastes like real pasta is extremely hard. But Banza to the rescue!! Thank you for making this wonderful product. I make the elbows about twice a week. I also love the plain pizza crusts so I can make my own white sauce pizzas. Yes, chickpea pasta is more delicate than wheat pasta and I found the best way to keep it's integrity is to boil water, add pasta, stir and bring back to a boil, cook for about 3 minutes, then turn off stove and put a lid on the saucepan and let the pasta sit in the hot water for about 10 minutes. Then strain and rinse and enjoy.

I'm trying desperately to find a pasta substitute, due to eating low carb. I have tried SO many. The texture is good on this, unfortunately I can't get past the taste. There's just a funky taste to it. I really wanted to like it.

I purchased 2 boxes. I only cooked one. I over cooked the 1st box. When you cook over 5-6 minutes the pasta will be super mushy. This is the like love reason review. The pasta at 5 minute will seem undercooked. But just rinse off for 1 minute under water. My veggie spaghetti sauce was hot enough to cook the noodles a little longer. This method works! However my digestive system feels bloated with this banza brand. But chickpea made pasta will fill you up faster.

I am a health guru and know the positive aspects of pulses like chickpeas on sustainability in general (lower CO2 Emissions, nitrogen fixing etc), but how do I know that this chickpea pasta actually has 50% more protein, 3x more fibre, etc since I see no proof to support this in the form of a LCA or any other report. Do people just take their word for it or are we still being greenwashed in 2024?
