Ingredients
for the stir fry filling
3 oz baby bella mushrooms, sliced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 head broccoli, cut into small florets
1 can baby corn, coarsely chopped
2 cloves garlic, chopped
½ C soy sauce
1 Tbsp rice vinegar
1 tsp sesame oil
for the empanadas
1 pack empanada discs
1 C shredded manchego cheese
2 eggs, beaten for egg wash
optional: salsa, for serving
Instructions
1. First, make the filling. Place all vegetables in the So Yummy by Bella Air Fryer basket and coat with the soy sauce, vinegar, and sesame oil. Cook for 20 minutes, shaking every 5 minutes. Let the filling cool
slightly before the next step.
2. Brush sides of each empanada disc with egg, then add a scoop of the veggie filling and a small
handful of shredded cheese in the center. Fold in half, then use a fork to seal and score the
edges of the empanada.
3. Place inside the air fryer basket and fry for 10 minutes.

I've tried multiple jarred salsas and couldn't seem to find one that does the trick until this one. The Good & Gather brand seems to be constantly trying new things and making adjustments. This restaurant style is probably better than most well-known brands'.

This is the best jarred salsa I’ve tried! It has a great texture and flavor, even better than some fresh salsas I’ve had. This will be a staple in our pantry!
