We own many Wusthof knives but they do not compare in any way to the quality of this knife. The blade needed only to be touched to a piece of paper to slice of small shreds easily. It is SO razor sharp. And it is beautiful to look at. Amazing knife.

The knife is GORGEOUS, Absolutely stunning!!!! After much research, I decided to invest in the Miyabi Black series knife. This 9.5' Slicing knife is well made. My hand feels very stable using this knife. Tested it on slicing a very thin slice of prime rib and it's absolutely gorgeous. I personally also owned the Shun Premier knives set and this miyabi black slicing knife top all my Shun Premier knife. Worth the investment !

[This review was collected as part of a promotion.] The 9.5 inch Slicing knife is a work of art. Not only is it beautiful to look at it is extremely capable of everyday slicing. I do prefer just a shorter length for daily use, but this is able to slice through longer meats where you need to get only one cut.

[This review was collected as part of a promotion.] If you had to get one knife from the collection besides a chef’s knife, this would definitely be it. Great for carving a turkey during Thanksgiving or slicing fish when you want to do a sushi night at home. Also a great show piece with the beautiful handle. It’s truly a masterpiece.

Almost too beautiful to use! Gorgeous 132 layers of Damascus, in a unique floral pattern sports a black ash handle, resulting in a stunning presentation. The MC66 steel is unique to this knife. This steel allows the knife to stay sharp for longer periods of time, without experiencing the brittleness some of the other Japanese steels display. Nice and durable, easy to replicate factory like sharpness with a whetstone at home. Love the paper like slices I can achieve with this knife. Never owned a knife that comes even close to how well this knife performs.

I am very happy with this slicer. The dark Ash handle is so unique making each piece individual The blade is long and thin, a little longer than the average slicing knife. The Damascus style layered blade provides precision slicing. The high carbon steel is sharpened to a razors edge. I love the attention to detail shown in the whole knife and the traditional methods used to sharpen it. The blade stays sharp for a long time and is easy to maintain. I love to use it for cooked meats and raw fish.

Miyabi Black knives are sleek, elegant, hand-made and incredibly hard. They are the hardest knives we make, 66 on the Rockwell scale. The dual beveled blade edges are sharpened to a slight 10 to 12 degrees on each side. All this means is they will slice so smoothly it will bring a smile to your face each time you use one. All this makes for an incredible slicing knife - use it for sashimi. It will amaze. Plus these knives are also gorgeous. The Damascus pattern on the 133-layer blades complements the beautiful Japanese Black Ash handles. No two are alike. These knives take a little maintenance to keep the wood handles smooth and beautiful. Enjoy and care for these knives for a lifetime.
