Q: How an these be certified gluten free if they add a warning that they are made on a line that also processes wheat and soy which could be awful for someone with celiac disease ?
A: These are very good but probably should not be purchased if you have celiac. The tiniest amount of wheat contamination MATTERS. I hope Simple Mills changes it's production line to be wheat free. I will have to check my other Simple Mills purchases. I am surprised this is marked "certified gluten free"!

We work very hard to ensure that there is no cross contamination and that the only ingredients in our products are what’s on the label. We follow all allergen policies set up by the FDA to verify that our lines are clean, and we have validated allergen cleaning procedures to ensure that all previous allergens have been removed. We also do extensive finished-product gluten testing conducted by a third-party laboratory that is an AOAC International certified lab for gluten testing and competence.

Q: Are these large enough to be used for smores?
A: S'mores d'oeuvres maybe with mini marshmallows! One side of each diamond is a little over 1". They are similar to the flavor of speculoos. Very good!

Q: I haven't had this product before. Could it be a good substitution for graham crackers as a cheesecake crust? I want to avoid seed oils. Thanks!
