For lovers of good rice, this husked rice mix of red rice, black rice and white rice from the Camargue wetlands in southern France is a must try. It contains medium grain white rice (80%), red rice (15%) and black rice (5%). Camargue rice is very rich in fiber and is known for its chewy texture, its nutritional content and its organoleptic qualities. Similar to a wild rice blend, this mix of three rices is a great side dish and can be included in many recipes from rice salads, rice pilaf, Jambalaya to burritos. Straight from France rice mix may also be used as a risotto rice instead of plain white rice. Because this Camargue rice is a whole grain rice, meaning the hull, or outer bran, is still intact and has not been removed, this rice mix can be sprouted to make Gaba rice, which is more nutritious than regular rice and is known to be good for the nervous system and brain health. Although GABA rice (which stands for Gamma-aminobutyric acid) is usually sprouted brown rice, other whole grain rices can also be used. Sprouted rice is widely used in Japanese cuisine. To sprout the rice, simply soak it in room temperature water. Change the water every 8 to 12 hours and around the 2 day mark, tiny sprouts should start to emerge.
