Q: Do these pans end up with a raised bottom after a few regular use, or do they remain flat so that oil doesn't end up pulling to the sides/edge of the pan? Thanks

A: What you are describing is called warping. Rapid Heating and Cooling, Empty Frying Pans Placed on High Heat, and Mismatched Burner Sizes can cause warping. If taken care of properly, warping should not happen on any pan.
