Had the 6 inch original and not version 2 6 inch carbon, steel chef knife with wooden handle for quite a while. It is holding up magnificently and only needs intermittent honing and stropping. It still cuts through everything as if it was butter. Very highly recommended. Have no idea I how the new handle will change not only the appearance and also the hand feel while grasping the knife.

You have such control and finese, while still having the rocking ability to efficiently get through pretty much anything you throw at it. Getting through veggies, fruits, meats, this is such a fun knife to use when you don't need the height and length of the 8" Chef's knife.

I like shorter length knives with taller bellies and this fits the bill. my only concern is like many others have said the blade is not straight. i could notice it just holding it the first time and after several techniques to assess straightness I confirmed it is off by a few degrees. That would definitely a huge bummer and I considered sending it back but will give myself a bit to see if it makes any actual difference when cooking

The Meiji line of Bob Kramer knives is an asian inspired look on a western knife. The edge angle and the steel are in keeping with a typical western style Kramer production knife. The detailed and asian inspired handle with angles and smoothed corners gives the feel of a traditional eastern D shaped handle. An unexpected and stunning look to this collection.

If you do not know the name Bob Kramer, you need to! A true master bladesmith who designs some of the finest knives in the world! This stunning 6" Meiji is 100 Damascus layers built into a super-sharp and durable knife. Wide blade so you can move food from cutting board to pot. The handle is exquisite and has a beautiful mosaic pin, designed by Bob in his WA studio.

Sometimes you just want a smaller chef knife and when you do, this one is perfect. I love the Meiji line for many reasons, but the pakkawood handle shape has to be one of the top reasons. I love how it fits in my hand and does not create fatigue when working in the kitchen for extended periods of time. Bob Kramer designed the handle to be comfortable for right-handers as well as left-handers. The blade is super sharp and durable, so you will have this one for years to come.

This 6-inch chef's knife, with the wider blade, is reminiscent of a Japanese butchery knife. It is fluid and responsive. I like it for boning fish with a tougher skin and bigger bones. Great for chopping vegs and cubing meat. The beefier handle feels good in my hand. The Meiji line is as tough as it is beautiful. Made of 101 layers of steel, and ice hardened in the process, this knife will work hundreds of menus before it needs to be sharpened. The patterned blade is signals the Damascus-style layering. The bright stainless is eye catching. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip.

I am not usually fond of 6" chef knives, the blade just doesn't seem to be long enough. This knife is the exception. Everything on this knife is balanced perfectly, the handle is wide and long and the blade is also wide with lots of edge exposure due to the half bolster. It really is a joy to cut with and has become one of my favorites in my collection.
