This stone is great for maintaining your knives' razor-sharp edge, to a scalpel-like sharpness. As with most stone sharpeners, this does take some practice but can easily become one of your favorite maintenance activities. This is the next level of stone sharpening steppping up from 1000 gritstone to 3000 depending on the preferences and needs. It is advisable to start from a lower grit to sharpen and you finish with the higher grit. I suggest practicing on an inexpensive knife first when you are just getting the feel for stone sharpening. But it is totally worth the time and money for that perfectly clean cut. It just elevates the entire cooking experience. Practice makes it perfect!

If you are not familiar, watch a video online and practice a bit, and you will be amazed how you can bring new life into older or often-used knives! And the Kramer name means great quality and tools that will stand the test of time.

Amazing stone - will get any knife, especially Miyabi knives back in shape. You will have scalpel like edges once your done. Remember, while learning use a practice knife (perhaps a garage sale find), then when you have mastered the technique start on your knives.
