Description

This skillet is infused with nitrogen, creating a harder-than-common-cast-iron finish. It has all the benefits of cast iron but with a surface that can't be scratched off, will never chip and creates a non-stick surface It may just be the lightest iron skillet you'll find. Features a cool, smooth stainless steel handle. Comes with a heatproof glass lid so you can watch your food as it cooks - no splattering. Dimensions: Inside 11"ID x 2"D, Outside 11 1/8"OD x 2 1/8"H, Weight with lid 4 3/4 lb (just skillet 3 lb). Helpful Hint: Care and cleaning of cast iron cookware is easy! It may be just a little different from what you are used to, though. Unlike conventional seasoned cast iron cookware, this skillet can be scoured. Its non-stick properties are from nitrogen infused into the iron, not seasoning that only lies on the surface. So, scour to your heart's content! Hand washing is best. Washing in a dishwasher may cause stains. Stains can be removed by seasoning the pan. Seasoning: Seasoning is not needed, unlike other cast iron cookware. However, the non-stick properties of the pan can be slightly improved if you season it. Detailed instructions for this are included with the pan. You can season it by frying a batch of bacon or coating the pan with cooking oil and heating it in your oven. If you season it, keep in mind that scouring will remove the seasoning. To remove cooked-on food: Pour enough water into the skillet to cover the cooked-on residue. Bring the water to a rolling boil. Carefully pour off the water. Rinse the pan until cool. Wipe clean with a plastic scouring pad. If you seasoned the pan, this will not remove the seasoning. This process sterilizes the pan. You can dry and store the pan without washing it. Black residue left on the pan after cleaning? This is a harmless carbon residue left from cooking or seasoning. If it bothers you, you can remove it by gentle scouring. If you like the pan seasoned, keep in mind that scouring it can remove the seasoning. White residue left on the pan after cleaning? This is harmless calcium deposits from your water. To remove, scour the pan. Then, mix ½ cup vinegar with ½ cup baking soda in a plastic container. Spread the paste on the white stains and let soak. Wash and scour the pan. Repeat if needed. (This treatment will remove seasoning.)

  • A: Here is a quick cleaning guide for you. Hand wash only – avoid the dishwasher to prevent rust stains. Scrub freely – nitrogen-hardened surface won’t wear down. Boil water to loosen stuck-on food, then rinse and wipe clean. Residue? Black (carbon) or white (calcium) can be removed with gentle scrubbing or a vinegar-baking soda paste. No seasoning required—just clean, cook, and enjoy! This skillet is fully compatible with induction cooktops.

Terrible skillets. Wont take a cure and everything sticks. Yes they are lighter than regular cast iron.

Husband's favorite pan

Couldn't get him used to my heavy cast iron, so purchased this and snuck it on to the stove - he's loving it. It's developing a nice cooking patina, is easy to clean (get a chain mail scrubber), and is lightweight. It hasn't left the stovetop since it arrived!

I'm now a Believer

Good morning everyone! I had never heard of this type of cast iron so I was skeptical. Then I considered the communities Lehman's has served for so many years successfully. While I'm English what I do not about these communities is they seldom if ever waste their money. And that was the deciding factor. When I first used it, yes there was some sticking but first time eggs and bacon are like that with new cast iron. Cast iron gets better with love. I did a seasoning using lard and the oven. POOF now we got non stick happening. Not sure how others here ret up their pan but after washing using very hot water and brush, I put the pan on the stove med heat for about 10 minutes to remove water from the pores. Then I coat my pan with a grease (lard or bacon) and just put it back on the stove to cool. Done After a few more uses I now appreciate the excellent value of this pan. It's mostly two of us these days so the 11" size is just right for most meals. I do have other larger skillets but this has become my favorite everyday At this price point it is a great value for new

Good alternative to regular cast iron pan

I've used the skillet a few times but the jury is still out on if can take the place of a regular cast iron pan. It cooks food well but the surface seems easy to scratch. Some of the 'blackening' or seasoning rubbed off but should build back with use. I like the size, at 11 inches it's between the 10.25 inch and 12 inch standard skillets. I like the thin side walls but we'll see if it warps with use. The handle is hollow and is easy to hold.

Not for everyone in our home. But I love it!!!

I love. My husband hates it. So we have two pans, His and Hers. I hated it when my husband cooked in it. I loved it, after I scrubbed his mess out of it and seasoned it. It cooks evenly, smartly and beautifully! And it's light enough for me to lift.
