The fine edge santoku - Japanese for "three virtues" - excels at three cutting techniques. Expertly mince garlic, slice cucumber, and dice onions with this Asian all-rounder.The MIYABI Black 5000MCD series is a true work of art. This series boasts blades of ultra-premium steel for unsurpassed sharpness. Exquisite Japanese craftsmanship merges with expert German engineering for the ultimate kitchen knives. The blades are constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 on the Rockwell hardness scale. This results in an exceptionally sharp and long-lasting edge that is highly corrosion resistant. The authentic, thin, Japanese profile blades are wrapped in 132 additional layers of steel, resulting in a gorgeous flower Damascus pattern. Sharpening is done using the traditional, three-step Honbazuke method.The handle of the Miyabi Black series is made from the prized Bigleaf maple and dyed a black ash color. The grain and color of the black ash contrasts beautifully with the Damascus pattern of the blade. The handle is crafted in a traditional "D" shape, with a rounded spine and heel, providing optimal ergonomics for fatigue-free cutting. Handcrafted in Seki, Japan.

Fantastic craftsmanship
Gorgeous, wonderfully well-made knife. Very sharp and easy to handle, has a great weight and feel. Accidentally brushed it lightly with my knuckle as it was laying on my cutting board and even the slight touch gave me a paper thin nick, so clearly quite sharp! Just what you look for in a knife.

5.5” Santoku- a perfect knife
[This review was collected as part of a promotion.] The first thing to notice with the knife are the aesthetics- the hammered blade with the Damascus steel effect is gorgeous. The knife itself is a perfect addition to our kitchen, for all the times when you don’t want to reach for the chef’s knife but the utility/paring knife won’t get the job done. The knife is remarkably sharp out of the box, and we’ve gotten great use already- strongly recommend!

[This review was collected as part of a promotion.] I love Miyabi knives. I own a couple from the Birchwood line. I wanted to try one of the knives from the Black line, and this one seemed like a good one to round out my collection. I have smaller hands, thus the 5.5-inch Santouku works very well for me. Nice, sharp blade that feels amazingly solid. Highly recommend for those who are looking for a workhorse with a smaller footprint that doesn't overpower smaller hands.
