A Taste of Home, Found Way Up North
I’m originally from South Louisiana, and after moving to the Pacific Northwest, finding good quality Cajun products has been a real challenge. Anyone from back home knows how hard it is to replace those familiar flavors once you leave Cajun country. I’ve tried just about everything available in supermarkets out here in Washington, and most of it doesn’t even come close. This sausage, though, genuinely surprised me. While nothing will ever be exactly like what you get straight from home, this is by far the closest I’ve found—and it’s far superior to anything else I’ve seen on local shelves. The flavor, seasoning, and overall quality really hit the mark and brought back a little taste of Louisiana. Great job—this one definitely earns five stars.

Multiple pieces of bones
Purchased in November 2025. Almost chipped my teeth. Multiple pieces of bones in the andouille sausage. Quality def lacking and not worth breaking your teeth on.

Tough, full of gristle and chewy fat
Bought this because I've had it before and really liked it. Something has gone very downhill. The sausage, cooked two different ways from two different packages, was really awful. I put the first package in jambalaya and noticed that the fat to meat ratio looked wrong with huge chunks of fatty material and a noticeable toughness in parts. I cooked the other package in a cast iron skillet for sandwiches, and the casing was extremely tough, there were again enormous chunks of chewy fat with gristly bits. Eating this sausage in a sandwich was extremely unpleasant, and I'll probably throw the other 3 sausages in the trash. What happened to this product? It used to be my premium buy, but now I'd rather buy a cheaper brand because I thoroughly believe it will taste better. I hope Aidells isn't dead.

Fresh rolls , mustard , onions and disappointing andouille sausage. Chew for flavor and expel un chewable majority of the “sausage”

Great quality sausages
This sausage is always a staple in my fridge because of it’s fresh ingredients. Tastes authentic and goes great in lots of dishes. I like to chop it up and add it to a can of lentil soup to add some bulk for a quick nutritious meal.

Cartilage and gristle
I used to love these sausages. But the last few times I’ve purchased them I can’t get through more than 2 bites without having to pull out bits of gristle and cartilage. It makes the experience not worth another attempt. Quality has really gone downhill.

Inedible sausage
We just bought the Cajun Style Andouille smoked sausage with pork for the first time. We were very disappointed as the sausages were inedible. There were large chunks of fat and nerves and the casing was very thick and wouldn’t break down when trying to eat them. Also, they are very expensive for what you get.

Delicious with Lentils!
