Nitrided Pans Are The Real Deal
Nitrided pans are 'forever pans' without forever chemicals. Vastly better performance than ceramic, vastly lower care than regular carbon steel, and properly used, equal to PTFE without the temperature limits, lifespan limits, or forever chemical issues. I've gotten rid of all my other skillets except an antique cast iron skillet I use for corn bread and Dutch Babies, and one PTFE pan I use for making salt caramel. While not as forgiving as a PTFE pan, if you don't overheat the nitrided pan and use a bit of a high temp oil, like avocado, you'll quickly master these. Last night I pan seared Ahi tuna, set it aside, switched to butter to make a piccata sauce, and then finished the Ahi before serving. Then, as an experiment, i. intentionally didn't clean the very acidic (lemon + dry white vermouth) remainder until this morning. That would completely strip a regular carbon steel pan. With a ntrided pan - no damage. Highly, highly, recommended.

Very bad sticking food pan
Very bad frying pan in terms of food sticking to the pan. I have tried medium heat with oil and food constantly sticks to the pan. Not good especially given the high price. When contacted Anolon, they said I can’t return it despite only used for two weeks or so. This one goes to the garage bin real soon.

Coating came off in less than a month
This is the second Everlast N2 pan I have bought. The first one, a 10-inch pan is great. However, this 12-inch pan seems to lack the same quality. No real differences in cooking or care, yet this pan's coating has started to come off after less than a month's use. Disappointing to say the least.

Had High Hopes
After fairly extensive research, I decided to get the Anolon nitrided steel pan as an alternative option to my All-Clad D5 stainless steel set. Have been disappointed since the first use. The pan warps and rocks at medium-low heat creating hot spots! Most everything I’ve cooked sticks. I have an easier time cooking with stianless.

Good Non-Stick but surface inclusion visible
After normal seasoning and use, the pan maintains a nice smooth finish. However, after initial seasoning a persistent whitish small (8-10 mm) surface flaw was easily visible in the middle area. Seems like an inclusion in the base metal, also catching on the fingernail. Not sure if that is a warrantee defect. Other than that, pan performs as advertised.

Big disappointment
This pan is overpriced and is utter garbage. Seasoned like they recommend and yet food still sticks like glue. Furthermore, (and even worse), pan warps considerably on my induction stove. That may be ok in a gas stove, but NOT on indiction…and this happened when I was not even using pan with high heat. Save yourself the trouble and avoid this like the plague!

warranty issue
I have been trying to resolve a warranty issue with this recently purchase 12" carbon steel fry pan. It's been a month now and there has not been any resolution. Clearly, anolon has no intention of standing by its warranty claims. Therefore, I have trashed your pan and will never purchase any anolon products again nor will I ever recommend your products to anyone. My rating is ZERO.

Great pans!
I have been using these pans for a few weeks now, and absolutely love them. Bacon, sausage, eggs, flapjacks all turn out great and no sticking! Much better than the carbon steel pans I had been using. Only real gripe is with the excessive packaging. Came in huge padded boxes that would have protected crystal stemware. Both pans would have fit easily on one box!

I hate this pan
We are on our second set of Analon hard anodized cookware. The pan is loosing its non stock properties. We decided we would try this pan. It heats unevenly, it is not non stick right out of the box. I have tried treating it like my cast iron and that does not seem to help it be non stick. They will not stand behind their product. I asked for a refund and was denied. I am not waiting to hear about the status of my warranty "ticket" they asked me to submit. This will be the last piece of Analon I buy.

Terrible
Never happy with this, but yesterday, while sauteing chicken, at high temp, and cooling the pan in cold water for the next batch, the entire coating came off leaving a silver pan with no coating. I will exercise the warrantee,. Rapid cooling in cold water of hot pan caused my coating to disappear, Try it

Try seasoning twice - eggs still stick. So not as good out of the box as I thought it would be. Still a good heavy pan, hopefully over time non stick will get better.
