Description
While we were in Mexico, we fell in love with chile rellenos. When we told Amy's chef, Fred, about it, he created a unique version of that popular dish, our Chile Relleno Casserole. To make this mildly spiced and absolutely delicious casserole, fire roasted poblano chiles are chopped and added to organic zucchini, corn, rice and beans, which are all then generously topped with Monterey Jack and Cheddar cheeses.

This is the tastiest of Amy’s frozen Mexican style meals. Easy to prepare in the microwave. It’s a small amount of food - the regular price is way too high for what you get, but I’ll gladly buy again when it’s on sale.

This is a real contender for when I don't have time to char, sweat, and peel the poblanos, cook the rice, etc., or just spending the time in the store finding everything. It tastes a lot like a chile rellenos casserole I make but I add dirty rice with black beans instead of regular rice, and queso asadero in place of the cheddar. I like that mine, Amy's is not fried! I love Tex/Mex foods.

I love that Amys has healthy ingredients for quick lunches. Although they do need to be paired with a salad or side dish when eating for lunch at work to make me full. This one is delicious.

Baked in toaster oven and took the foil off for the last few minutes so the edges got crispy. Tastes even better than it smells and my junk-food loving husband was tempted to swipe it from me without even tasting first. May try the other reviewer's suggestion of topping with shredded lettuce or even scooping with tortilla chips. It baked up thicker than oatmeal but I can see where some might call it mushy. Great treat for when I want something naughty since the sodium and cheese amounts are a little above me dietary budget.

Bought a bunch of Amy’s meals for lunch at work and this one is so good. It have a good amount of flavor and it’s a decent size. Not super spicy so you can add more if you’d like. I’d definitely buy again.

Pretty tasty. We like to top it with shredded lettuce and avocado slices then eat it with tortilla chips. Otherwise kind of runny and mushy to eat just with a fork. It just seems more like a dip than an entree but that’s ok with us as the flavor is good.
