Plant-Based Egg-cellence
Garbanzo Flour and the Garbanzo/Fava Flour works fabulously as an egg replacement in scrambles, quiche, and Frittatas (Omlettes)! It is also satisfying and delicious. So happy to find this in my plant-based food journey. Here's a great collection of recipes I found and used for this Potato-Leek Frittata which even my high-schoolers approved of. There's a wealth of great recipes at this site for using Garbanzo-based flours. I googled recipes using this flour and found the "Plant Based School Chickpea Flour Recipes." What I liked about this flour as an egg replacement is that it is from beans (healthy!) and 7 grams protein per 1/4 cup flour (an egg is about 6 grams protein and about 1/4 cup per egg-- so they are roughly equivalent nutritionally on that front.) I also prefer cooking from scratch and using whole real ingredients, which this enables me to do.

Nutritious!
Gluten free garbonzo bean flour is one of the most nutritious and it is a key healthy ingredient in my own pancake flour mix. The gluten free all purpose flours do not provide the nutrition I need.

I lived in Spain for 20 years and in southern Spain they traditionally use garbanzo flour when pan frying fish in olive oil. It has a lovely nutty flavor and fries up to a wonderful golden brown. We dust it on chicken, fish and have even used it as a sort of modified tempura. Not your typical garbanzo flour application in the USA perhaps, but it is delish! I bet it would be good in a savory pie or tart crust too.

Great nutritious gluten free flour.
I love this flour and it is one of the ingredients in my favorite gluten free sandwich bread. I use Bette Hagman’s recipe for Sesame Bean Bread from her book “The Gluten Free Gourmet Bakes Bread.” It makes a nutritious fullmsize loaf of bread that tastes great in sandwiches or toasted.

A great wheat flour replacement for diabetics
I used the garbanzo fava flour in the place of wheat flour in my long time pancake and banana bread recipes, plus added a little extra leavener. I can hardly tell the difference! And the fewer carbs and increased fiber and protein keep my blood sugar from spiking, which is what keeps us diabetics from being able to eat many of the things we love. Well done!

Just "google" SOCCA BREAD . . .
One of the few things not "out of stock" at the time, so, I "googled" it to see what it's used for, discovered "socca bread" also known as "farinatta" , apparently quite popular in Provence area of France and Genoese area of Italy. Quick, simple recipe - 1 part flour, 1 part water, dash of salt, pour into preheated, oiled cast iron skillet or pizza pan and bake in preheated 450 deg. oven for 15 minutes. Excellent as a flat bread or quick "pizza". I now make it almost daily! What a great "discovery".

One of my favorites. I used this flour + corn flour + all purpose one + some vinegar and pepper. I mostly bake on the stove to avoid the oven heat, specially in summer!
