  • A: No. I have no idea why those are listed in the ingredients. The package doesn't say the same. I'm allergic to soy and milk and have been using this flour for months so at least I can attest to its lack of those two allergens.

    I use King Arthur Flour's non wheat flour for family members who don't digest gluten easily. I find that it is as close to "cup for cup" as any alternative flours I've used, but do find that recipes are best replicated when using a scant-cup measurement. It seems to absorb moisture just a tad more that wheat flour. This is just my experience. . . I do recommend this product!

    I usually make my Christmas cookies GF because of family members with gluten allergies and I always use cup4cup brand GF flour. I guess target stopped selling it so I bought king Arthur’s. WOW am I disappointed. My snowball cookies were so gritty and completely fell apart. It was like eating sand. Disgusting. I threw my thumbprint dough away before even wasting my time making those once I realized how disgusting the snowballs were.

I managed to squeeze them into a functional shape for filling, but if this batch had been meant for a special event or for sale, it wasn't good enough for that. (I appreciate that I didn't have to search for xantham gum or other chemically necessary ingredients to make an occasional gluten-free item.
