Let me tell you something… these are delicious. I’m supposed to be on a diet but had to make these before they expired… and it’s going to be a struggle to not eat them all in one sitting. My Go-To!
This is my go-to cornbread “recipe”, never fails. I live at altitude so I follow the extra flour instructions (4 tbsp), and I also add a half cup of either fire-roasted corn or regular corn (canned or fresh) with a bit of green chiles. I double the recipe with two boxes so that I use a 9x13 inch pan. I also melt 2-3 tbsp of butter and drizzle on top before baking. I don’t find this to be as sweet as others have mentioned and maybe because of the addition of extra flour due to altitude or because of adding corn and chiles?

A sweet unpleasent suprise.
Warning, this is not a savory cornbread! This is a sweet corn muffin/cake mix. It is good if that’s what you’re wanting, but if you’re looking to make cornbread dressing this is not for you. I wish I would have read reviews or the package could have said said “sweet cornbread”. Maybe I should have read the ingredients list…with sugar listed first I should have known…so this is really on me. Anyway, be informed on what you’re buying.
