I’m still learning how to use whole wheat flour like this. My first attempt at subbing white with this flour made pretty dry zucchini bread after consulting with King Arthur on how to go about it. But I think I can get it to where I want it. It’s very tasty though so I’m going to keep at it.

Picked up my groceries today and didn’t realize until I was home that there’s 2 openings in the bag. One straight across on the side and one on the top. It’s fine if while the employee was grabbing it the bag tore but how will I know for sure. Next time I’ll just do my shopping in store vs having it brought to me.

This Climat Blend Flour made the best whole wheat bread we've baked in over 40 years of bread baking. The flavor was perfect, wheaty but not too sweet. The grain of the loaf was tight yet springy. Planting more of these grains in fields throughout the world support great baking well into a warmer future.

I used the regenerative wheat in a Sourdough Brownie recipe and it came out wonderful! I was happy to use a healthy flour that is environmentally sustainable. It’s light enough to substitute for all purpose flour in most recipes.

I have used the climate blend flour to make KAB’s climate blend muffins and climate blend sandwich bread which has become the bread I bake regularly. For bread, I prefer this flour to whole wheat: it seems tastier. Also, of course, I like the idea behind this flour, so even if it is more expensive, I think it is worth it, and I hope that when it becomes more well known, the price will go down.

I have made the muffin recipe on the back of the bag three times now with three different fruits. They have turned out tasty and hearty without being dry. The Regeneratively Grown flour was surprisingly delicious. I expected and hoped for a certain nuttiness as found in regular whole wheat flour, but this flour is especially nutty, slightly sweet with a back flavor that pleasantly lingers without a trace of bitterness. SOLD!

I made my usual 2-loaf batch and instead of using one cup of home ground wheat with bread flour, I used 3 cups of climate Blend with bred flour. The result was a tasty, very fine grained bread.
