The meat should be allowed to breathe for about 5 minutes (maximum). The odor should dissipate leaving no foul smell. Not 96% lean (otherwise fine, but save the extra $)
It was ok, but absolutely not 96% lean--I'd guess 93% at best. (So just buy a 93% and save the money.) I buy a different 96/4 ground beef from another store, and end up with such little fat that I never have to drain the pan. After cooking a pound of this, I ended up with at least 1/4-1/3 cup of grease.

Product weight frequently inacurate
The weight of the product consistently falls short of what is indicated on the package. I bought several packages that were missing up to 1 ounce.

We do take steps to ensure the integrity of product weight. There are consistent and regular checks on all scale equipment used in our production facilities. Our scales are the best in the industry and are calibrated to precise and exacting standards. The checks by USDA are done on the product at the plants and on the product once it reaches the stores. The compliance standards are such that a .25 oz variance +/- is allowed on packages. There is one other consideration that needs to be mentioned, the nature of meat is such, that as the product ages and as it is moved and jostled during transport, it loses some of its liquid. This is called purge. The purge contributes to the true weight of the meat and is trapped in the pad usually found under the meat. To get a true weight, you must also weigh the purge. I like this because it is extremely low in fat and it is always fresh. I divide up the package and freeze some and it always weighs exactly 16 oz. The people complaining should go back to buying meat with more fat content.
