I'm surprised about so many reviews mentioning seizing. I primarily use these in cookies but I have melted them to make chocolates, bark, truffles, etc. I won't say it never ever happens but not any more than with any other brand... I try to always keep extra bags of each kind on hand just in case. the taste is good for a reasonably priced chocolate, and when I made the switch to these in my choc chip cookies I got rave response.
