The rate of crystallization varies based on the honey produced by the bees and other conditions, including storage temperature and light. I use honey almost on a daily basis. I love local honey or honey I know that hasn’t been processed. I have tried several honey and know what I like and what I don’t like about them. The first 2 times I got this honey I loved it but the last two times it has tasted awful! Like plastic/ fake. I’m not sure what it is but I will no longer be buying it from a grocery store. I will stick to my local honey or buy it from somewhere I know it fresh and not processed (honeyville Colorado)
