Enjoyed and already buying another box. I added mini chocolate chips and even my pickiest eater has had 2 muffins already! The mix has lots of pumpkin spice, if that’s your thing. I had one heated up with a little butter on top—yummy breakfast.

While Simple Mills other products are tasty, this one was an epic fail. There is to much spice, its overwhelming. And I am a pumpkin spice fanatic!! It was like biting into a candle. We had to throw it out and for the price, its beyond disappointing.

I read the reviews about it being too dry and not sweet enough. So... I substituted the oil for 1/2 cup canned pumpkin. I added 1/3 cup brown sugar. Along with the water, I added 1/4 cup half and half. In addition, I made a crumb topping from butter, brown sugar and gluten free flour to add to the top. They were perfection!

So I’ve never made these without modifications. I read other reviews and based on complaints of dryness, I use 3 eggs, 1/2 cup dairy-free yogurt (instead of water) and 1/3 cup coconut oil. Based on complaints about lack of sweetness, I add a drizzle of honey and lots of chopped dried fruit (raisins, dates, prunes - whatever I have on hand). Based on complaints of lack of flavor, I add 1/2 tsp pumpkin pie spice. This makes 12 muffins and I bake for 15 min. With these changes, the muffins are delicious! Nuts would also be great. This may seem like a lot of changes/additions, but I always have these things on hand.
Tastes like a nutmeg bread....not pumpkin. Disappointed.

I bought these for myself to have as a dessert on Thanksgiving, and I’m in love! My mom use to make homemade pumpkin bread, and this tastes exactly like her recipe! They aren’t overly sweet, so you could get away with eating them for breakfast. The consistency is amazing as well. Feels and tastes like regular gluten filled pumpkin bread! I will be buying more!

The consistency and texture of this loaf/muffin mix is good. The directions are easy to follow. I appreciate that it has no artificial stuff. The flavor is just not good. Maybe if pureed pumpkin (not dehydrated) was added it would taste better. Would not buy this again.

Being vegan and gluten free, I gave up on baking a long time ago. But I tried this, and the muffins came out really good! I used flax meal and water instead of eggs. This is a keeper.
