Then we blend into a smooth puree, fill the pouches, and place them in a large pressure cooker where they are held under heat and pressure for a short period of time. This type of manufacturing is known as retort processing, or in-container sterilization. It kills bacteria and makes the product shelf-stable without the need for preservatives or refrigeration—similar to home canning. Because the food is cooked inside the pouch, nutrition is retained, and studies have shown that pressure cooking can help preserve essential vitamins.
