    Very good flour. I have been making a lot of rye bread lately and it is great. Just wondering how farmers and millers prevent and/or test for claviceps purpurea? It's not a mold that I want to consume. (Seems to not be an issue.)

    I'm at 7000', where baking a great loaf can be a challenge. With a few adjustments to the recipe on the back of the bag I baked a beautifully risen with perfect texture: Added an additional tbsp of wheat gluten, reduced the yeast to 1.5 tsp., increased the salt a tad and reduced the molasses just a little. Kneaded the dough thoroughly in a stand mixer and gave it a second rise in the bowl before the final rise in the loaf pan. Baked at 375 for 10 minutes (to help set the structure) before reducing the temp to 350 for an additional 20 minutes. Checked the internal temp (see bag) with an instant read thermometer.

    The flour arrived in perfect condition. The flour has a darker color and is ground a little bit coarser than regular flour. I use the dark rye flour to bake German-style bread, and when used per the recipe, gives the bread it’s characteristic color and flavor I’ve come to love.

    This Stone Ground Organic Dark Rye Flour makes the best Bread ever!!! In the past my Family only ate store bought Levy Seeded Rye Bread. After removing Cheese from our diets we stopped eating Bread. My Sister Makes her Bread from scratch like our Mom used to do for us as Children. I decided to give it a try. My Family loves it hot from the pan without any Butter or Jelly. SCRUMPTIOUS!!!
