Description
Bob's Red Mill Xanthan Gum is must-have for any gluten free baker. Xanthan gum thickens batter and gives gluten free breads a better rise. It also help emulsify liquids that would otherwise separate. The name comes from the bacteria that helps creates the final product, Xanthomonas campestris, which feeds on a sugar, then ferments. The fermentation product is dried and then ground into Xanthan Gum.

Q: is this the same thing as gum arabic? I'm wondering if it would work for watercolor binder and if its the same thing with just a different name, or not.

If you're new to gluten-free baking--xanthan gum is your new found friend. It offers structural strength that makes up for the loss of gluten in your baked goods. Gluten-free doesn't have to mean "brick-like." Experiment with different flour types--for texture and strength, and include xanthan to give your baked goods a firm texture that can still have loft and air.

It really pulls coconut flour recipes together and keeps them moist. I love that xanthan gum is also a prebiotic. I would recommend only using around half a teaspoon per recipe or your muffins/bread, will get gummy. I can now make my own stir fry sauces, gravies, and soups without the use of flour or cornstarch. It is a lifesaver in that respect. Good stuff!

The Better Homes and Gardens test kitchen came up with a gluten free flour recipe that you can substitute cup for cup for regular all purpose flour in your recipes and so far, I cannot tell the difference! The final product is light, moist and rises like all purpose flour. So far I have made bar cookies and pumpkin bread with fantastic results. Recipe uses White Rice flour, Sorghum flour, Potato starch and Xanthan Gum.
