Q: is this the same thing as gum arabic? I'm wondering if it would work for watercolor binder and if its the same thing with just a different name, or not.

submitted by April - 2 years ago
  • A: Xanthan Gum is different from gum arabic. Xanthan Gum is a binding agent however we have not tested it as a binding agent for watercolors so you may need to try a small test batch to see if it works.

Q: What are the ingredients ?

submitted by Jane - 3 years ago
  • A: Xanthan gum is a popular food additive that's commonly added to foods as a thickener or stabilizer. It's created when sugar is fermented by a type of bacteria called Xanthomonas campestris. When sugar is fermented, it creates a broth or goo-like substance, which is made solid by adding an alcohol.

Q: Does this product have cross-contact with any of the eight common allergens (dairy, wheat, egg, soy, peanut, tree nuts, fish, shellfish)?

submitted by New Mom - 4 years ago
  • A: No it does not have cross-contact with any of the eight common allergens.

Xanthan for Texture in Gluten-free baking

5 out of 5 stars

If you're new to gluten-free baking--xanthan gum is your new found friend. It offers structural strength that makes up for the loss of gluten in your baked goods. Gluten-free doesn't have to mean "brick-like." Experiment with different flour types--for texture and strength, and include xanthan to give your baked goods a firm texture that can still have loft and air.

High quality, and since you use very little in a recipe, this bag is going to last a long time.

I'm still in the learning process, so my evaluation thus far shouldn't amount to anything.

It really pulls coconut flour recipes together and keeps them moist. I love that xanthan gum is also a prebiotic. I would recommend only using around half a teaspoon per recipe or your muffins/bread, will get gummy. I can now make my own stir fry sauces, gravies, and soups without the use of flour or cornstarch. It is a lifesaver in that respect. Good stuff!

The Better Homes and Gardens test kitchen came up with a gluten free flour recipe that you can substitute cup for cup for regular all purpose flour in your recipes and so far, I cannot tell the difference! The final product is light, moist and rises like all purpose flour. So far I have made bar cookies and pumpkin bread with fantastic results. Recipe uses White Rice flour, Sorghum flour, Potato starch and Xanthan Gum.
