This gluten-free mix makes it easy to get tasty waffle or pancake batter in a jiffy and provides 19 grams of whole grains per serving*. *The 2020-2025 USDA Dietary Guidelines recommends consuming at least 3 servings of whole grains per day for a total of 48 grams. One serving of whole grains is equivalent to 16 grams.
Directions
Pancakes
For about 6 (4-inch) pancakes, use 1 cup mix, 1/2 cup cool water*, 1 egg and 2 tablespoons butter (melted).
For about 12 (4-inch) pancakes, use 2 cups mix, 1 cup cool water*, 2 eggs and 4 tablespoons butter (melted).
*For a richer flavor and texture, use milk or buttermilk in place of the water
1. Heat electric griddle to 375°F or skillet over MEDIUM heat. Grease lightly with oil, if necessary.
2. Whisk together water, egg and melted butter in a medium bowl. Whisk in mix until batter is moistened and slightly lumpy; do not overmix.
3. Pour about ¼ cup batter onto hot griddle for each pancake. Cook about 1 ¼ minutes per side or until golden brown.
Waffles
Heat lightly greased waffle iron. Prepare mix as directed above. Pour desired amount of batter onto iron. Bake until steaming stops and waffles are cooked. Makes 10 (4-inch) waffles.

I bought this to make waffles, but the mix to water ratio is off. Made as directed, but as soon as I started mixing, it was like I was making drop biscuits instead of waffles. I had to double, if not triple the water, to get a much thinner consistency. I did like the flavor, not real sweet, but when making from scratch I omit the sugar in my recipe.

YUCKY PANCAKE MIX
Worst pancake mix ever!! I like Good&Gather brand normally but something was off about their pancake mix. I make pancakes all the time. ALL THE TIME. These pancakes turned out heavy is the best way to describe it. Real dense and tasted like cardboard. Even my fresh blackberry compote couldn’t fix it. Never again will I buy that brand. I’ll stick with Krusteaz OR the Winco brand is surprisingly good.

I typically love this stuff, made the best pancakes I have ever made at home but there appears to be a quality control issue as this current bag is terrible! It instantly thickens to the point of being unpourable when mixed following directions. I’ve tried to thin it but it still is too thick and the pancakes turn out tough. I’m hesitant to buy again.

I’ll give it some points for them being fluffy, but otherwise these pancakes are foul. They have a weird texture and bitter aftertaste, but I should have known better than to stray from King Arthur, now that is a good gluten free pancake mix.
