Not anywhere close to instant.
If instant means in a few minutes this is the thermometer for you. Its fine for checking internal temp but if you're frying plan on waiting over a hot fryer for a minute to get accurate temp.

Long lasting, good price
This thermometer worked well for a very long time,probably 10+ years. I’m replacing it with the same model. I broke it, cleaned too aggressively. I pulled the metal part off the end. It withstood water damage, the display showed damage but it kept working. The readings were accurate and fast, it’s easy to clean.

Works well... for a while.
It worked really well for 6 months or so, then suddenly would not work at all. Battery replacement did not fix it. I’d recommend a more reliable brand at the price.

Wouldn't turn on, doesn't work at all
As soon as I took it out of the packaging it didn't work. It wouldn't turn on at all. Really annoying bc I bought this in my pickup bc I wanted to try making candy tonight, but guess I'll have to wait until I can get one from Amazon.

The light is handy
We’ve gone through several of these, not because they are not durable but because my husband leaves them in the sink and starts rinsing dishes and soaks the unit causing to get waterlogged and ultimately stop working. If you need a large read out, this is on the smaller side. We typically grill after the sun sets so the light is handy.

Washing renders it useless until dry
WHEN it worked, it was great. It was accurate, and the display was easy to read. However, two big issues: 1) As noted by others, the display turns itself off automatically. However, this is not the thermometer itself turning off. Result: if you don’t remember it’s on, you will run down the batteries. 2) The biggest issue in my eyes is that when you wash the thermometer, you need to be extra careful to not get the top portion wet. If you do, the thermometer stops working. You then need to remove the batteries and prop it up, probe end down, so all moisture drains out and dries. I’m pretty sure this is why ours finally died, as when we recently brought it out, it would not turn on, even after replacing the batteries. It was dry, but I suspect the electronic parts simply stopped responding. So now, I need to buy yet another meat thermometer. (I bought an analog one at the same time, and it never gave an accurate reading, plus it was very slow. Someone needs to make a waterproof, or at least water-resistant, digital thermometer!)

Plastic melted quickly
It was great but only lasted for 6 months before it started warping and a year before the metal became detached from the plastic. If you are looking for something cheap for a season and not wanting longevity it works.
