Not nonstick
We only used this twice, did not use cooking spray and did not have the heat past medium and not only did it completely oxidize, it is not nonstick. Worst pan we have ever purchased. It is unfortunate because we have used other Greenpan products for many years with no problems. Be aware, there are no refunds or exchanges allowed so I would recommend going with another product, or even a different brand that has better customer care.

My new go-to pan for everything
I recently was given several options for a 15 year performance gift at my work. After looking through several pages of kitchen tools, backyard accessories, and pocket knives, I found this 12" carbon steel frypan. I've been thinking about trying carbon steel cookware for a little while, and this seemed like a great opportunity to try it out. Upon receipt, I cleaned it inside and out with warm water and a mild soap, then heated it up with some oil and some potatoes (recommended by a YouTube video. not sure it did anything). In the last three weeks, the only time I've removed the pan from my cooktop is to run a little warm water and wipe it clean. I've cooked steaks, eggs (fried and scrambled), chicken thighs, spaghetti sauce, browned sausage and chicken for a gumbo, made a few bags of ramen noodles with chicken and eggs, made French Toast, and baked a deep dish pizza. This pan is fantastic. It really gets the results of cast iron and stainless steel in one versatile pan. I'm not a professional cook by any measure, but I love cooking and experimenting in the kitchen. I'm also impressed at the results it gets on the horrible electric stove in our temporary apartment. Can't wait to try it out on a proper cooktop when our house is ready. To be honest, I was getting this just to try out the material to see if I liked cooking on carbon steel. I expected this pan to be a little bit cheaper quality, but thought if I liked the material I could always upgrade to the Made In version. This pan is sturdy, has a nice weight, and really does handle everything I throw at it. If anything ever happened to it I would definitely buy another.

Junk! 12in pan warped after 2 uses on induction cook top, dose not season well, seems like there is some kink of coating on pan that makes it impossible to season. Save yourself the trouble and buy something else.

Warped immediately on first use
This pan warped as soon as it reached a moderate sauteing temperature. It flattens out when it cools down, but warps immediately again when you put it on any heat.

Gave them as a gift to my daughter who is planning to get an indiction range and she loves this set of pans. They are super easy to clean and nothing sticks to them. Highly recommend! I have the smaller one and absolutely love it!!

We are very sorry to hear about the issues with your cookware. This issue can be easily resolved! It is likely that you have a layer of carbonized oil built up on your pan that will create a barrier between the pan and your food. When this happens, you are basically cooking on the layer of oil as opposed to the surface of the pan. This layer may not be visible. This cleaning method has proven to be extremely successful and can be used when you notice staining and/or sticking. For the best results, please try this method twice. Once complete, you may resume normal washing with soap and sponge. Fill the pan halfway with water and bring it to a near boil for about 2 minutes. Pour out the water and place the pan on a sturdy surface such as a wooden cutting board. Carefully use a Melamine sponge on the warm surface; this should do the trick. If this does not work, please email GreenPan directly at customercare.us@greenpan.com. They are happy to help!

A workhorse pan for regular use
The Bobby Flay carbon steel frypan is a reliable sturdy lightweight pan for everyday use. It's great for dishes that start on the stovetop and finish in the oven or under the broiler since it is safe up to 600 degrees. It was preconditioned so no food sticking on the first use. I do wish it had a smoother handle finish for comfort, but this is a minor quibble.

Good size/shape for a lot more than Paella - I use it for sauteing and stir frys. Makes meal prep simple. Will try it next on steaks and see if it can replace a heavy cast iron for me.

Crepe Happy
[This review was collected as part of a promotion.] As a crepe making novice I thoroughly enjoyed using this Bobby Flay by Greenspan 11” Carbon Steel Crepe Pan. It gets hot and maintains even heat beautifully. Even my husband couldn’t resist trying it out. It’s weighty but still easily handled with one hand. Just rent to oil it after washing and it will keep looking good.
