A: Thanks for your question—it's an important one when it comes to coffee quality and safety. Our coffees are sourced through a Direct Trade model that emphasizes careful harvesting and processing at origin. Beans are handpicked and processed as soon as possible after harvest, and most of our coffees undergo a “washed” method. In this process, the coffee beans are separated from the fruit and thoroughly cleaned with water before drying, which helps remove residues and significantly reduces the risk of mold and mycotoxins. We also cup hundreds of samples from each harvest to detect any off-flavors or defects, including those associated with mold, bacteria, or toxins, and we simply do not purchase any lots that show those issues. In addition to this internal quality control, we do conduct independent third-party lab testing. Our green coffee is periodically tested for pesticide residues, heavy metals (like lead, cadmium, mercury, and arsenic), and the mycotoxin Ochratoxin A. These tests have consistently returned negative results. While we don’t rely solely on third-party testing for every batch, our combination of rigorous sourcing, processing standards, sensory evaluation, and periodic lab verification ensures a clean, high-quality coffee.
