Q: Is this a good choice for cooking salmon on a smooth glasstop/ceramic electric stove ?

  • A: The 6.5" skillet is a little small for cooking fish. We suggest the 10in or the 12in skillet for fish. Best is to heat the skillet on medium heat for about 4 minutes, then put the fish skin-side down, wait until the fish creates a "crust" that makes it easier to flip, then flip, and wait for it to create a crust again before you try to move it.

  • A: Victoria Pans are not machined smooth. They come with a sandblasted skin finish. With proper heat and fat for foods being cooked, you should have no problem with food release. For delicate foods such as eggs, heat skillet on low heat (or medium low on some stoves). Allow to heat for 5-7 minutes. Then add cooking fat/oil, then the eggs. Allow a "crust" to form on the protein before using a thin metal spatula to lift the egg.

Very useful!

Small cast iron pan.

Just the right size for a small breakfast of eggs, sausage, or bacon. It is preseasoned. So just use it and cook what you like.Unlike ceramic which is glass or Teflon which flakes, cast iron is safer. It's been around forever.
