tasty, light, somewhat challenging to cook
I love these little ravioli. They are light and lightly flavored. They have somewhat subtle punches of lemon and fluffy cheese (that is more like a milky racotta than a bold parm). I find that adding some flavorful topping like EVOO and some salt helps to bring out the bright flavors, but some people may not be happy with how light these flavors are. I personally think they taste fresh and healthier for a pasta, reminding me of fresh mediterranean fare. My husband even likes them, though he is not a pasta fanatic. They are difficult to cook in hot water without the ravioli exploding out of the pockets. I find that I have to keep the temp down while simmering these and I usually lose some of the filling in a few ravioli if I turn away even for a second. It is worse if I just let the water boil at max power. These float almost immediately in hot water, which I think is an indication that they are done, but I usually try to cook them for a few minutes to be safe. I think these could be pan fried for a nice nutty flavor and it would better preserve the filling.

These used to be great
These used to be one of my favorite purchases from target, but here lately every time I cook these, even on a very low boil, they fall apart almost instantly. I’m not sure what they did to these but whatever the change was it wasn’t good.

Fell apart and no flavor

This pasta was delicious, but like some of the other of you say, some of the pieces were moldy. I had two packages and both contained pieces that could not be used. I really hope that Target will do something about this because it’s a wonderful product except for this situation that probably exist because buratta is not a stable cheese.
