A beautiful pan whose Kryptonite is moisture!
This review is more of a how-to for people who didn’t look up how to care for cast iron before using this. This pan is beautiful and deserves your pancakes and in return only asks some easy cast iron care. Note: the silicone handle is not safe because the pan slides out. I used an oven mitt and it worked fine. I use it to make dosas (Indian pancake-crepes). First try was a fail, the batter burned on, and I wanted to give up. Then I tasted the part that had come unstuck… it was so much better than from the nonstick pan! I knew I had to keep trying. I cleaned up the icky burnt on mess by pouring water inside the pan, turning the heat to medium, and scraping with a metal utensil. I quickly poured the water out, made sure all the mess was gone, and it looked good as new! Immediately, to avoid oxidation from the water, I put it on medium heat to dry all the water. Once it looked dry, I confirmed by splashing some drops of water onto the pan. It sizzled and evaporated immediately. Perfect, the pan is hot enough to have no more moisture! Then I added oil. It didn’t take long to heat the oil, and the same splash test confirmed that the oil and pan were hot enough to not have moisture. I let the hot pan drink the oil for a few minutes. Now the moment of truth… the second dosa (pancake). With the pan heated to splash test standards, I added more oil, and when it passed the splash test, I turned the heat to low and added my batter. This is where my method deviates from the typical crêpe instructions. I let it cook briefly, and as soon as it looks like the bottom has solidified, I use my spatula to gently poke at the sides of the pancake to coax it up away from the pan. Then gradually I can get under it and eventually unstick the whole pancake from the pan. Once it’s unstuck, it’s smooth sailing. Add more oil if it wants some, and move the pancake around now and then, but if you’ve gotten to this point it shouldn’t stick now and you can turn the heat up again if you want some browning. Incidentally, this is my first time cooking with cast iron. I’ve cooked on carbon steel a few times now and lots of that knowledge is transferable. If I can do it, you can too, as long as you remember the cardinal rule of non-stick cast iron cooking and care: MOISTURE IS THE ENEMY, and HEAT EVAPORATES MOISTURE. Just remember that and you can figure it out easily.

Defective
I purchased this direct from Target. I own other Lodge pieces. This one has been a disappointment. The factory seasoning is bad and I've had a very difficult time correcting it. There is a weird extruding pimple on the inside that catches when I clean it or use a spatula. I purchased it specifically to make pancakes that I had been cooking in my Lodge skillet. I wanted the flatter larger surface. I have tried this griddle at least 2 dozen times now and have yet to turn out decent pancakes on it. The silicone handle is too big and the griddle wants to slip out of it. I worry that it will crash onto my stove or leave me with a bad burn. Nothing about this griddle is of the quality I normally see from Lodge.

Nice looking Griddle but
I was so happy to order this Griddle. But received with discoloration looked like a rust. The hand is short and the silicon attachment is loose. If it’s hot and you try to remove using the silicon handle it might slip from your hand. Overall looks nice but didn’t work out for me. I’m returning this.

Not actually a nonstick pan
It says preseasoned and nonstick, but the first time using it to cook a pancake (I even oiled the pan) it completely stuck. It sounds like a lot of people have the same problem, as I read through other reviews. I don’t want to return it because that’s such a waste! but I’m super upset it’s advertised as nonstick and it actually isn’t.

Great Pan...handle cover needs work
Lodge makes great cast iron and this pan is no exception. Have used it to make perfect crepes. I do not like silicone handle cover. It was ill fitting and slid when picking up the pan to swirl batter.

Awesome griddle!
Perfect griddle. I seasoned it when I got it. Oil it up, place upside down in your oven at 350-375 for an hour. Best nonstick pan! Pancakes come out great!
