Bob's Red Mill Semolina Pasta Flour - 24oz

Quality is always great with Bob’s products and that is no different for this semolina flour that we use to make our pizzas with. Lightly dust the surface of your dough with this flour. It makes your pizza that much more delicious.

I would love to give this five stars, but it is enriched. The folic acid in most enriched products is a synthetic that should not be consumed by the many people who might unknowingly carry an MTHFR defect-ingesting synthetic folic acid can lead to a wide range of heath issues. According to the 1000 Genomes Project, approximately 25% of the global population are carriers of MTHFR 677C>T, Hispanics being the population with the highest frequency (47%), followed by Europeans (36%), East Asians (30%), South Asians (12%) and Africans (9%) [17]. Approximately 13.5% of Europeans are homozygous for the variant allele. MTHFR 1298A>C is also present in about 25% of the global population and occurs more frequently in South East Asians (42%) and Europeans (31%). The frequency of the 1298A>C polymorphism in Hispanics and Africans is 15%. Approximately 11% of Europeans are homozygous for the 1298A>C variant allele. There area other studies that place the percentage of people who should not take folic acid closer to 50%. I like the texture in recipes and all of the products by Bob's Red Mill that DO NOT contain enrichment. Is there a BRM semolina that is not enriched?

I used this in a bread recipe given to me by a friend. It tasted like what you get in an Italian restaurant.

Works very well for hand cut pasta and in combo with "OO" for filled pastas. I also used it recently in baking a Neapolitan cake. that was a big hit.

Experimenting with Semolina bread..already found out that it must rise for longer periods than regular white flour (according to the Indian Youtube lady).
