I usually get the least expensive chocolate for melting, because when I make candy, I make a large amount. I had noticed that my melting chocolate hasn't melt smoothly & seem to seize up, so I wanted to give Ghirardelli a shot. I have many times used Ghirardelli chocolate chips, but this was the 1st time for the bittersweet bar. After making & dipping my candy, I will NEVER use anything but GHIRARDELLI! It was so smooth, melted beautifully, excellent quality & the bittersweet kept the candy from being toothache sweet. I plan on using Ghirardelli only in my baking and I would definitely recommend it to all of my baking friends.

The cacao percentage is perfect for those that prefer a richer chocolate flavor in their desserts. The chocolate was easy to work with and the double boiler method resulted in a silky consistency.
