A: You may close the cover with this deep fryer if you wish, but use caution. When lowering a basket containing uncooked potatoes, make sure the oil does not bubble up to the rim of the fryer. (for example, pat the potatoes dry before placing them in the oil) If it appears that the oil will bubble up to the rim, raise the basket and allow the oil to subside. Then slowly lower the basket again. Repeat until the basket is completely lowered into the fryer. Then begin your timing. Complete instructions are included with the fryer.
