Description

A Cast Iron Skillet That's Tougher and Lighter! Designed by Proprietor Galen Lehman, this skillet is infused with nitrogen, creating a harder-than-common-cast-iron, food-safe finish. It has all the benefits of cast iron but with a surface that can't be scratched off, will never chip and creates a non-stick surface It may just be the lightest iron skillet you'll find. Features a cool, smooth stainless steel handle. Comes with a heatproof glass lid so you can watch your food as it cooks - no splattering. Helpful Hint: Care and cleaning of cast iron cookware is easy! It may be just a little different from what you are used to, though. Daily usage: Unlike conventional seasoned cast iron cookware, this skillet can be scoured. Its non-stock properties are from nitrogen infused into the iron, not seasoning that only lies on the surface. So, scour to your hearts content! Hand washing is best. Washing in a dishwasher may cause stains that can be removed by seasoning the pan. Seasoning: Seasoning is not needed, unlike other cast iron cookware. However, the non-stick properties of the pan can be slightly improved if you season it. Detailed instructions for this are included with the pan. In nutshell, you can season it by frying a batch of bacon or coating the pan with cooking oil and heating it in your oven. If you season it, keep in mind that scouring will remove the seasoning. To remove cooked on food: Pour enough water into the skillet to cover the cooked-on residue. Bring the water to a rolling boil. Carefully pour off the water. Rinse pan until cool. Wipe clean with a plastic scouring pad. If you seasoned the pan, this will not remove the seasoning. Black residue left on the pan after cleaning? This is harmless carbon residue left from cooking or seasoning. If it bothers you, you can remove it by the gentle scouring. If you like the pan seasoned, keep in mind that scouring it can remove the seasoning. White residue left on the pan after cleaning? This is harmless calcium deposits from your water. To remove, scour the pan. Then, mix 1/2 cup vinegar with 1/2 cup baking soda in a plastic container. Spread the paste on the white stains and let soak. Wash and scour pan. Repeat if needed.

    Lighter weight cast iron cooking.

    Was a bit smaller than I anticipated when compared to a traditional cast iron skillet. Overall I'm very pleased with it. It is definitely lighter, more non-stick and the handle takes longer to get hot. I appreciate the depth of the pan and the slanted sides, They make it easy to saute and stir fry without pushing food over the sides. I highly recommend this pan.

    Working to season

    I seasoned a pan one session as instructed. I cooked an egg and it’s stuck. I am currently cooking bacon one strip at a time onlyonly and when I finish the package, I will test it again.

    Lots of carbon with every meal

    I read that it needed to be washed with soap and water to remove the black material-carbon caused by the final machining. I waked and scrubbed it 12 times. Yet after the 12th, it still throws off carbon when washed. I like food without thee carbon from the machining. I can't recommend this pan.

    Great gift for newly weds

    I have had an 11” Lehman’s nitrogen hardened skillet for sometime and love it for its lighter weight, see through lid and ease of cleaning. These were purchased for a friend and a newly wed couple. I added the 8” pan to my collection. They are great pans

    Wish I'd Bought it Years Ago

    I've had an 8-inch cast iron skillet for at least a couple of decades, and I liked it, but I often wished it had a lid. That's what sent me to Lehman's in search of a similar-sized skillet with a lid. I couldn't be happier with this one. It's so smooth it almost doesn't seem like cast iron. The glass lid is perfect. It is now my favorite cast iron skillet--and I have LOTS!

    Try it, you'll like it

    The more I use it, the better I like it. I hope to purchase the larger size in the future. It Is a good weight as I found the "normal" cast iron a bit cumbersome due to the weight.

    Nice that it comes with lid

    I haven’t used the pan yet. Giving 4 stars as no instructions on how high the heat should be if using stove top instead of oven. Apparently I used wrong heat setting as I had to scrub and scrape the gunk that formed after heating. I’m looking forward to trying it out tonight
