  • A: Thanks for your question! You can use our Gluten Free 1-to-1 Baking Flour just as you would regular wheat flour in a cake recipe. You'll still need to add baking powder/baking soda, and other ingredients listed in the recipe, but there is no need to add any additional xanthan gum or other special ingredients.

  • A: Hi Linda, This is a great question! We don't recommend using our Gluten Free 1-to-1 Baking Flour to replace wheat flour in yeast/bread recipes. Gluten free yeast recipes are tricky and often need additional liquids or eggs. They also have different rising times. For the best results, we recommend following a gluten free specific recipe for bread instead of trying to adapt a wheat recipe.     Never Disappointed

    I've used this gluten free flour in cooking and baking several different items, and I've never been disappointed. I need be completely wheat free, not just gluten free, and this product works for that. It goes fast because the bag is so small. I just wish I could purchase a larger bag. It takes up half the bag just to make one batch of cookies.

    Gluten-free flour

    Bob’s red Mill pancake mix has changed and it is not as good and they have added ingredients. Now I use Bob’s red mill one to one flower and make pancake mix from scratch and waffle mix plus my banana bread. It is wonderful gluten-free flour.

    Best homemade bread!

    I bought this for a friend of mine to make me a loaf of jalapeño and cheddar bread. Fantastic! I never thought I would like bread again after going gluten free.

    I am aiming at a healthier life style and thought to try this flour and it just had things coming out very grainy tasting (not the texture the taste). I have tried this with several recipes and just felt it did not work for my taste buds. Over all I did not end up using the entire bag which is a shame because it is expensive. Thankfully I have found an alternative that doesn't break my budget.

    Best flour for choco cookies

    Gluten sensitive or not…USE THIS for your non yeasted baked goods! Your treats will be super yummy! As the packaging says, it’s a 1:1 swap for APF. You don’t need to add any binding agents as it’s already mixed in. You cannot mess this up. The rise & chew, overall appearance, texture & taste is incredible. I ran out of this recently & used APF for my cookies & I was so disappointed. The cookies were good but nowhere near as tasty as I thought they would. For recipes that use cornstarch you might can omit, but run a small test batch first. Mixes easily & has a light texture.

    Best for cookies

    I didn’t realize how great this was until I ran out and used APF for my chocolate chip cookies. NEVER again! The rise on these is great, the chew perfection…and gluten free at that. From appearance to texture to taste my cookies were & are a hit at the office. No clumps. Easy to mix. Very soft. I intend to use only this for all my baked goods moving forward. You should, too.

    Every Christmas we make Italian pizzelles and Mexican biscochitos. We like the gluten free flour better in these recipes. There is a crispness we love

    New way to replace flour

    I made the chocolate chip cookies on back of bag for my daughter( who can't have gluten) and I tried them and I liked them to they were better then the ones in store.

    My wonderful baking powder/cream of tartar biscuits didn't rise. They were in dense lumps and had an unpleasant taste. The Astoria Red Cake didn't rise. It has a leavening of vinegar and soda. It was dense and kind of gummy. The flavor was ok, but not as good as usual.

    We apologize for the trouble with your recipes! If you're not already we would recommend spooning the flour from the bag into a measuring cup and then leveling off the excess (if you are not doing this already). Sometimes if you scoop directly from the bag, the flour gets compressed, leading to too much being used which can cause a gummy texture or density. If you are already spooning from the bag, you can try reducing the amount of flour by 1/8 to ¼ cup to see if this helps, or if the dough is too dry you can also add more milk by the tablespoon as needed. It can also be helpful to let the dough rest for about 10-30 minutes before portioning/baking as this lets the dough “hydrate” and more fully absorb liquid.     Nope.

    I used to think this particular brand of gluten free flour was good, that is until I started consuming a store-brand version of flour for a while. Recently, the store brand went out of stock, so I purchased this. Boy oh boy am I disappointed. Simple pancakes with this brand were so gummy, no matter what I tried - despite adding more flour to the mix to thin it out thinking the liquidity was the reason for the texture. The other brand always produced fluffy and normal pancakes. Maybe this flour serves other purposes better, but this experience will keep me away from this gluten free flour in the future.

    Gritty

    Something seems changed with this 1:1 baking flour. Baking seems to turn out with a grittier texture than before which I don’t like.

    Thank you for your review. Nothing has changed with our flour but letting your dough/batter sit for about 10 minutes before baking can help it to hydrate and reduce the gritty texture which can come from rice flour.
