Works great!
It really pulls coconut flour recipes together and keeps them moist. I love that xanthan gum is also a prebiotic. I would recommend only using around half a teaspoon per recipe or your muffins/bread, will get gummy. I can now make my own stir fry sauces, gravies, and soups without the use of flour or cornstarch. It is a lifesaver in that respect. Good stuff!

As a serious baker I use zanthan gum frequently. BRM is the brand I chose after trying others; the quality always remains high.
