NOT good for waterbath
We have had this pan over a year. Used it MANY times. the spring mechanism still works well and it looks brand new. My issue is that the extra lip on the bottom makes it virtually impossible to do a water bath. We've tried every pan and baking sheet we have. It's too big. Otherwise a great pan.

Last minute cheesecake.
I decided to make a last minute biscoff cheesecake. There were only two left of this item in stock for pick up. I read the reviews regarding quality but purchased anyway in hopes it didn’t happen to me and if it did, I could easily return. When I got the item, it was in good condition, thank goodness! I used Saran wrap because the recipe I was following she used parchment paper. Honestly I was just too lazy to wash dishes lol. So I cannot speak on the leak that others reviewed about. Presentation was good also after removing the Saran Wrap. 5/5 for me!

I forgot I bought this pan before to make a cheesecake. This is not a good pan for cheesecakes. The crust always ends up too high, even when I’m using the same amount and there’s less cheesecake. It always ended up being half cheesecake and half crust. I don’t know what it is about the pan, but the cheaper ones work better. My cheesecake never comes out presentable. So I won’t be buying this one again.
